Butcher Slang Terms to Know

1. BRT

Short for boned, rolled, and tied, this is a type of preparation that will make it easier for you to transport and cook the meat. Plenty of different types of meat can be packed in this way, including beef, pork, chicken, and lamb.

2. Offal

This term refers to some small pieces of meat from entrails, small organs, or other miscellany like pigs’ feet, pork neck, or turkey tail. These pieces are then packaged together and sold as offal, though the actual meat included in each order can vary.

This term often causes confusion among buyers who take the name literally and think it’s meat that comes from the actual butt of a pig. However, it actually is a cut of meat from the top part of a pig’s shoulder. This is also sometimes referred to as Boston butt.

4. Gooseneck

Another term that is not to be taken literally, gooseneck is actually a cut of beef from the hip that is served as a bottom round roast.

5. Chuck Eye

For those looking for an inexpensive cut of meat, chuck eye is a cut that comes from a cattle’s muscle near the fifth rib. These are sometimes referred to as the “poor man’s ribeye.”
