Despite common misconception, sushi and sashimi are not one in the same. While both dishes commonly center around fresh, raw fish, their preparation is quite diverse. These two Japanese culinary staples have become popular in the states, and the following guide will help you understand how they differ before you head to your favorite seafood restaurant.

Sushi

Sushi can be created using a number of different ingredients. In some preparations, raw fish might not be present at all. The one constant of sushi is vinegar rice, which is where the dish derived its name. The presentation of the meal can also vary. 

Maki-sushi is perhaps the most commonly known preparation, with rice, seafood, and vegetables rolled together and wrapped in seaweed. There is also nigiri-sushi, in which vinegar rice is topped with other ingredients, usually raw or cooked fish. Some present sushi in a cone shape, which is known as temaki-sushi. The dish is commonly accompanied by wasabi paste (a type of Japanese horseradish) and soy sauce.

Sashimi

SashimiSashimi involves a much simpler technique than sushi, although it’s equally as delicious. Raw fish is center stage with sashimi, which is thinly sliced and usually served over a bed of white radish. Tuna and salmon are quite common variations. However, sashimi can also be prepared using octopus, scallop, mackerel, and prawns.

It’s best to prepare sashimi with saltwater fish. Eating freshwater fish raw can be problematic, as many carry parasites that can pose a health risk to those who consume it. Sashimi is also served with soy sauce and wasabi, but these accompaniments are typically mixed in the same dish.
