1. Season the Meat

Seasoning your meat is an important first step. Cuts of steak, chicken, lamb, or other meats should be seasoned with, at a minimum, coarse salt, pepper, and olive oil. If you have your own special spice rub, you can use it, but the goal is to let the natural flavor of the meat stand out. After you season the meat, let it rest for 30 minutes prior to cooking to let the spices settle.

2. Perfect the Sear

After the meat is seared, take them off the grill and turn the temperature down to 350 degrees so you can cook the meat to your preferred level of done-ness.

3. Let the Meat Rest

After you take the meat off the grill, it’s important to let it rest on a plate for five minutes so the juices can reabsorb. Your meat will taste tender and juicy without being runny.
