A Quick Guide to Winemaking

Picking & Crushing

Human hands or machines pluck grapes from their vines. What time of day the grapes get picked depends on weather conditions, as they must be cut when their sugar levels are stable. Vineyard workers sort the grapes to ensure the best wine before placing the fruit in a destemmer/crusher machine to release their juices. The machine separates the skins and seeds to prepare the grapes for fermentation. If red wine is being produced, the skins remain on.

Fermentation

wineFermentation is where the natural sugars in grape juice convert into alcohol. Grapes naturally contain yeast; however, cultured yeast is frequently added to produce even results. Sugar may also be added depending on the wine variety. The juice sits in barrels made of oak or stainless steel to complete the fermentation process and affect the taste of the wine. How long the wine ferments depends on the winemaker and desired taste.

Racking & Filtering

Once the wine has fermented for the desired length of time, it is separated from the yeast and other byproducts through racking, or pumping and filtering, wine out of its barrels. This process also provides the clarity wine needs, as any particle content gives the liquid a cloudy appearance.

Bottling & Aging

The final stages of winemaking include pouring the liquid into bottles and labeling them. Some wines sit for one or more years in oak or stainless-steel barrels before being sold to the public, while others are ready for consumption immediately. Again, the type of barrel used and the length of time wine remains in containers influences the taste.
