The month of May offers many delicious oportunities for fresh vegetables such as artichokes, peas, garlic, leeks, fava beens and more. Dr. Joy Lunan picked out three of her favorites because they are good for your teeth! Here they are. Enjoy!

Parsley ~ Herbs are full of many medicinal properties. Parsley is shown to have many antibacterial agents. The phytonutrients found in parsely can be a help to your overall health. Plus – it’s super easy to add it into your diet. Parsley is a great addition to soups, salads, smoothies, pesto sauces or as a pretty toppping to your meals. It can even cure bad breath naturally, and fresh breath is always a good thing!

Try this great recipe for parsley pesto:

Ingredients

2 cups packed fresh parsley (stems removed and cleaned)

3/4 cup raw cashews (preferably soaked and dehydrated first) 

1/3 cup olive oil

1 TBSP lemon juice

1/2 tsp lemon zest 

sea salt and pepper to taste 

Directions:

1. Place all the ingredients in your food processor and blend until smooth.

2. Remove from food processo and enjoy!

 

Asparagus ~ This delicious spring veggie contains important fiber. It has a great source of inulin, a prebiotic fiber that helps us digest probiotics. Probiotics are the good bacteria that keep our digestive system is good health. The importance of healthy digestion extends to dental health. A healthy digestive system is key to healthy teeth! 

Try this great recipe for Garlic Butter Asparagus:

Easy Sauteed Asparagus with garlic butter seasoning

Ingredients:

10 oz young asparagus
2 tablespoons melted butter
3 cloves garlic, minced
Salt, to taste
Ground black pepper, to taste
Squirts of lemon juice, optional

Directions:

Cut the bottom part of the asparagus stems, about 1/2 inch.

Heat up a skillet on medium heat and add the melted butter. Saute the garlic until slightly browned before adding the asparagus. Toss with a spatula to combine well with the garlic.

Add salt and ground black pepper, to taste. Add a squirt or two lemon juice, if using. Once the asparagus becomes tender and just cooked, remove from heat and serve immediately.

 

Avocado ~ This veggie can really improve your health – especially your dental health! Avocados are loaded with prebiotic fiber that promotes healthy digestion. This fiber feeds on probiotic bacteria in your oral and digestive tract. It also contains bunches of folate, Vitamin C, potassium, and vitamin B5 and B6. Basically, an avocado a day will keep the dentist away, but Dr. Lunan hopes not for too long. ;)

Try this recipe for Avocado “The Bomb” Sauce:

Avocado "Bomb" Sauce

  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 1/2 jalapeno
  • 3 garlic cloves
  • 1/2 bunch fresh cilantro
  • 1/2 fresh squeezed lime
  • Pinch of salt 

Directions:

  1. Gather ingredients, food processor, sealable container, knife, and cutting board.
  2. Wash ingredients well, especially the cilantro because it can hold in a lot of dirt.
  3. Cut lime and avocado in halves. Remove the avocado seed.
  4. Scoop the avocado from its shell in put into the food processor.
  5. Add 1/4 cup extra virgin olive oil, 1/2 jalapeno, 3 garlic cloves, pinch of salt and 1/2 bunch of cilantro into food processor. If you do not like heat, remove seeds of jalapeno beforehand.
  6. Squeeze 1/2 lime into mix. Blend for 3 minutes.
  7. Do a taste test. You may need to add more salt or squeeze more lime depending on your personal taste. If you would like a thinner sauce, for a dressing possibly, add just a touch of water to thin out. Start with 1/8 cup of water but the water is not necessary.
  8. Blend another 1-2 minutes.
  9. Pour into a container and eat up! Egg roll dip, on top of salads, over a steak, eggs, salmon so many options!
