Italian Food Tales: A Brief History of the Calzone, West Haven, Connecticut

Of all the items on the menu at your favorite pizzeria, few are quite as convenient as the calzone. Half pizza, half sandwich, this delicious meal was designed to be eaten with one hand; it’s easy to order with your favorite toppings, wrapped in layers of melty cheese and hearty dough. Whether you’re a die-hard pizza aficionado or simply curious about this Italian food, here’s a brief look at its tasty history.

Italian Food on the Go

From its origins in Naples, calzones were designed to be eaten without utensils. Their traditional half-moon shape indicates they were made by folding over a single round of pizza crust.

In Italy, calzones are often sold by street vendors. Traditional ingredients include salted bread dough, ricotta, mozzarella, Parmesan or pecorino cheeses, and ham or salami. The dough is folded over the ingredients and then baked. However, the beauty of this Italian food is that it can be filled with any toppings your heart desires, as reflected by the dish’s regional variations in Italy.

In Apulia, a variation of the calzone is called panzerotti. Resembling a small calzone, the panzerotti is stuffed with a combination of tomato and mozzarella, then fried.

Important Considerations

Although they share ingredients, don’t confuse the calzone and the stromboli. The latter is an American invention that was created in the 1950s. Stromboli consists of cheeses, Italian meats, and a tomato-based sauce that are layered on a sheet of pizza dough, which is then rolled up into a rectangle. The stromboli is either finished in the oven or fryer.

Notably, strombolis already contain marinara sauce, while calzones tend to be served with sauce on the side for dipping. No matter your preference, both of these foods are delicious!
