3 Classic Caribbean Recipes  

1. Coconut Shrimp

Crunchy and pan-fried, coconut shrimp is a classic Caribbean appetizer that can be served on skewers or displayed on a plate with dipping sauce. To create this delicious dish, combine 1 egg, 1/2 cup of flour, 2/3 cups of beer, and 1 and 1/2 teaspoons of baking powder in a bowl.

Dip the shrimp into a bowl of 1/4 cups of all-purpose flour and then into the first bowl of egg batter. Next, roll the shrimp into a third bowl filled with 2 cups of coconut flakes. This recipe calls for 24 shrimps, so repeat accordingly.

In a deep-fryer, heat 2 cups of frying oil to 350 degrees Fahrenheit. Deposit the shrimps into the fryer, allowing each to cook for 2-3 minutes. After the shrimp have reached a golden-brown hue, let the shrimp drip dry on a paper towel.

2. Crab Cakes

Caribbean restaurantA famous fishcake, crab cakes are a tropical tradition at many Caribbean restaurants. To cook up this breaded bite, preheat an oven broiler. Next, combine 1 pound of shredded crab meat, 1 and 1/2 tablespoons of bread crumbs, and 2 teaspoons of chopped parsley. In a separate bowl, beat 1 egg, 1 and 1/2 tablespoons of mayonnaise, 1/2 teaspoons of dry mustard, and a dash of hot pepper sauce.

Mix the contents of the two bowls together, using your fingers to shape small circles of crab meat. Then, place the patties onto a broiler pan greased with butter.

Broil the crab cakes for 10 to 15 minutes until they are lightly browned. Serve them a la carte or topped with salsa.

3. Pumpkin Rice  

A Caribbean comfort food, pumpkin rice is an authentic autumnal appetizer. First, wash 3 cups of basmati rice in a strainer. After rinsing the rice, add it to a pot filled with 6 cups of water. Stir 1 cup of sliced pumpkin, 1/2 diced onion, 1 hunk of chopped garlic, and 1 tablespoon of butter into the pot.

Next, turn the stove on to medium heat. Once the pot is boiling, decrease the temperature and let the rice simmer for 20 minutes until it’s completely cooked.
