To adhere to the health and safety laws of New York, vendors must obtain their food from approved sources only. Your truck must include heating and cooling storage, and a thermometer is required to ensure the proper cooking of meats. All processing and preparation of meat must be done at a commissary before it is stored in the truck. Employees are required to avoid smoking, be fully clothed, and always wash their hands after using toilets.
