Spaghetti Squash

If you have not yet tried spaghetti squash you are missing out. Simply bake about 30 minutes and scrape the squash to form strands much like the shape of spaghetti. Top with your favorite pasta sauces and enjoy. It is terrific with garlic, butter, parmesan, and salt and pepper too!

Zucchini Noodles

Another low carb option and so easy to prepare. You simply use a vegetable peeler to make lengthwise ribbons and sauté with a bit of oil, garlic, onion in a medium skillet. Then top with parmesan, diced tomatoes, or sauce of your choice. Note: They do have a kitchen tool that works great which forms the zucchini into a spiral, pasta-like string.

Butternut Squash Fries

Peel and slice butternut squash into strips and pat dry.  Coat a baking sheet with nonstick cooking spray and place sliced squash layering on the baking sheet and sprinkle with salt. Bake at 425 for approxiamately 15 minutes before flipping followed by an additional 15 minutes. Delicious!
