Quick, simple and delicious.  Pair with roasted broccoli or a leafy green salad for a quick meal your whole family will enjoy.

SALSA CHICKEN

Ingredients:

  • - 4 boneless/skinless, chicken breast halves (~ 4 oz. each)
  • - 4 teaspoons taco seasoning
  • - ½ cup of your favorite canned or homemade salsa
  • - 1 cup (2% milk reduced-fat) Cheddar cheese
  • - 2 Tbsp. light sour cream (optional)

Directions:

  1. Preheat oven to 375 degrees. 
  2. Place chicken in a lightly greased 9x13 baking dish.  Sprinkle taco seasoning on both sides of the chicken breasts, and pour salsa over all.
  3. Bake at 375 for 25-35 minutes, or until chicken is tender and its juices run clear.
  4. Sprinkle chicken evenly with cheese, and continue to bake for an additional 3-5 minutes, or until cheese is melted.  Top with sour cream before serving.

Recipe makes 4 servings.
