Chalk this up as another precaution that sounds better on paper than in practice. Some may choose to withhold a certain percentage of payment until they've deemed the remodeling job satisfactory, but this will likely just lead to a relative increase in pricing to cover overhead. Holding back more than that could also lead to your contractor struggling to complete the job, so it's best to avoid this tactic altogether.
