Zucchini Brownies
Ingredients
- 1 3/4 wholewheat pastry flour
- 1 tsp. sea salt
- 1 tsp. baking soda
- 1/2 cup cocoa ( I used raw chocolate cacao powder. Available from A New Leaf in Needham)
- 2 large eggs
- 2 cups grated zucchini
- 3/4 cup maple syrup
- 1/2 cup applesauce
- 2 tsp. vanilla
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350 degrees. Grease and flour a 9 x 13 inch pan.
- In a small bowl, whisk together the dry ingredients. In a medium bowl, mix together the remaining
- wet ingredients and beat well for 2-3 minutes. Slowly stir in the dry ingredients and stir until blended. Stir in walnuts, if you like.
- Place into a prepared pan and bake for 25 minutes or until a toothpick comes out clean.
