There is a common belief that fat is going to clog your arteries, but that is not how it works. Atheroslerosis is caused by oxidized LDL particles and not by fat attaching itself to the surface.  Simply put, Atherosclerosis is a complex issue with dozens of factors beyond your diet let alone or the fat content of your food choices.

Another concern is that fat is going to raise your cholesterol. The truth is that most people can eat cholesterol without it affecting cholesterol measurements in the body. Our bodies make cholesterol and when we eat it our bodies then make less of it. Cholesterol also happens to be the backbone of steroidal growth hormone in the body. So the reality is that when we restrict dietary cholesterol, we are severely handicapping our ability to maintain healthy muscle mass via healthy growth hormone. This leads to compromised muscle metabolism that in turn leads to increased body fat over time.

Another myth is that eating more fat is going to make you fat. Eating fat does not make you fat. The opposite is quite true. Fat is just a calorie like any other. Eating fat is more satisfying, therefore we eat less carbs and sugars. Studies have shown that eating less carbs and more fat not only  induces weight loss but also increases lean muscle mass.

Fat is also full of nutrients and vitamins essential to your health. For example the richest source of Choline is found in the fat in egg yolks; Vitamin E which is a potent antioxidant is found in red palm oil; Vitamin K2  which is involved in cancer prevention and bone metabolism is found in grass-fed butter; Cod liver oil is a source of Vitamin D and many people are susceptible to D deficiency.  

One benefit of eating fat in every meal is that it helps you absorb other nutrients. Also, high fat diets allow us to access excess body fat for brain energy, so you will not longer suffer with brain fog after you miss your meal.  In contrast to carbohydrates, dietary fat is a macronutrient that typically has no negative effects on insulin or blood sugar. 

Trans fats should be completely avoided because they can elevate your low-density LDL levels. These dangerous fats raise your bad cholesterol and lower your good cholesterol affecting this balance and over time the quality of your cellular structure is degraded.
