  • Matsaman Curry: What’s interesting about Matsaman curries, which are known to be somewhat milder, is that they are a Thai take on a Persian dish, having been first recorded in the cosmopolitan court of Ayutthaya in the 17th Century. It features spices not seen in other curries like cinnamon, cardamom, cloves, and nutmeg.
  • Panang Curry: Known as the mildest of the bunch, Panang curry’s spice mixture is combined with a choice of meat or fish and cooked in thicker types of coconut milk. Fish sauce and kaffir lime leaves accent this delectable option.
