Bill Granger took a leap of faith in 1993, when he was only 23 years old, and opened first eatery in Sydney, Australia. The place was modest, seating only 40 patrons, and open only for breakfast and lunch. Australia was in the midst of an economic downturn, making the availability of certain ingredients limited. However, his first restaurant quickly became known for its imported single-origin coffee, fluffy scrambled eggs, ricotta pancakes, and corn fritters. He also had the brilliant idea to put avocado on toast, which now, over 25 years later, is all the rage in diners throughout the world. 

Expansion

Granger thought that the concept of the restaurant was versatile enough to attract hungry customers in other parts of the world, and he was right. Legacy

Granger has gone on to write several cookbooks that share his favorite bills restaurant recipes, including the world-famous, creamy scrambled eggs and pillow-soft pancakes topped with honeycomb butter. Additionally, he and his restaurants have been featured on talk shows and in popular periodicals, like “The New Yorker”. Granger has also been credited with popularizing the idea of elevated daytime cafes, which are known for their comfortable seating and informal atmosphere, offering high-quality dishes, coffee, and cocktails.
