Farm-to-table is a modern movement built on the pursuit of sustainable agriculture, balanced nutrition, and a prosperous local economy. It is also a movement that the family-owned Kahuku Farms has embodied for generations. From their 125-acre farm to their local café, here’s how the North Shore farmers do it.

Harvesting

Starting as two family-owned farms that merged together in the 1980s, Kahuku Farms has a growing passion for providing quality produce to their community. They grow a diverse selection of tropical fruits and vegetables including apple bananas, papayas, kale, dragon fruit and lettuce. Each is carefully tended to by their local farmers, using the best agricultural practices. Produce is then picked at peak freshness, while it’s bursting with flavor and nutritional benefits.

Preparing

Once a crop has ripened or matured, it makes its way to the kitchen. There, the food is washed and prepped for cooking. Often, this process takes a steady, experienced hand.

Acai berries, for example, have an intricate process when it comes to preparation. When Kahuku Farms planted the island’s first instance of the sweet treat nearly eight years ago, the farmers thought they could simply toss them in a blender. But that was not the case. They first had to develop a method of carefully removing the berries’ hard, outer flesh without cracking the innermost seed.  

The extra effort pays off in the end, because this local café’s acai bowls are currently the only locally grown, Hawaiian acai being served today!
