The clock hits five and you are preparing for the mad dash home to prepare a healthy meal for your family? Sound like you? Don’t pull in to the fast-food drive thru...you can do better. It’s called “Speed-Scratch” meals. It is combining packaged ready-to-serve foods with a few fresh ingredients to wow your family and keep your calories in check.  Here are some of my favorites:

  • Stir fry:  Sauté shrimp, chicken or pork. Then add a bottled teriyaki sauce (make sure to read labels for calories and sodium). Mix in frozen stir fry veggies.
  • Chicken Artichoke Pockets: Start with a whole wheat pita pocket. Stuff with marinated,canned artichoke hearts, baby spinach (washed & ready), parmesan cheese, and chicken from a rotisserie chicken. Heat in the oven or microwave and enjoy.
  • Grilled salsa chicken: Right from the grill top with green salsa and Mexican-style corn and shredded Colby jack.
