Getting your hands on the freshest fish available in Honolulu necessitates proper storage to preserve your delicious haul. While the process for storing fish isn’t too complicated, the window you have to make sure all of the meat’s flavor stays intact isn’t the largest. Because of this, knowing how to properly store a fish is crucial to maintaining its freshness.

While the best method of storing your fish will depend on the time frame you’re working with, there are three main elements to be aware of:

  • Icing the Fish: During every step of the preparation process, it’s important to keep fish iced as well as possible. Using crushed ice is recommended because you can tightly pack it in around the fish, keeping it cooler than less-dense blocks of ice. Icing is also good for transporting fish, although you’ll want to make sure there’s a drainage hole in the container to keep the meat from being flooded.
  • fishRefrigerating the Fish: Refrigerating fish is a good option for meat that needs to be kept fresh on a more short-term basis. When properly stored in a refrigerator, fish can stay fresh up to five days. First, wash the fish with cold water and dry with a paper towel. Then, wrap it in wax paper, aluminum foil, or plastic wrap and store in the fridge (this wrapping method can also be used when icing).
  • Freezing the Fish: Freezing fish is by far the best way to keep the meat stored for long periods of time — three to 12 months. Exposure to air causes fish to lose its flavor, so limiting that contact is key. Using an air-tight Ziploc™ bag, tightly wrapped foil, or packaging the fish with an air-removal machine can help keep as much flavor as possible.

If you choose to freeze your fish, knowing how to thaw it is almost just as important as its storage. Using a microwave will cause parts of the fish to cook before being properly prepared, so you’ll want to leave the fish in the fridge overnight or place it wrapped in cold water. Do not thaw fish at room temperature. After all that work, it’s just a matter of what delicious recipe you decide to use!
