Once you’ve found the right type of rice, it’s time to get cooking. First, rinse the dry rice under cold water to remove any talc, which can disturb the cooking process. Next, combine equal parts rice and water in a medium-sized pot or rice cooker and let the mixture come to a boil before reducing the heat to a low simmer with the pot covered.

Sushi rice requires a unique seasoning to create the memorable flavor that you know and love. This should be prepared before you’ve cooked the rice so that you can access it easily when it comes time to flavor the dish.
