We want you to enjoy a healthier alternative that won’t leave you feeling bloated, fatigued and guilty, an alternative that will make you feel alive and energized and great about your body.
So, today I want to share one of those alternatives with you. Instead of mashed potato try…
CREAMY MASHED CAULIFLOWER:
- 1 head cauliflower
- ¼ cup unsweetened coconut milk
- ¼ teaspoon salt
- ¼ teaspoon pepper
Cut your cauliflower into small pieces. Steam the cauliflower until tender (about 10 min). Place cauliflower in a blender or food processor. Add dairy-free milk, salt, and pepper while blending until smooth. Remove from blender and put into a serving bowl.
*Make sure that the cauliflower is soft before removing from steamer. If it’s not soft, it won’t mash nicely, so rather steam for longer.
*Serving suggestion: healthy home-made mushroom gravy, big salad and a piece of clean, lean protein.
